Blueberry smoothie bowl

Why should açaí have all the fun? Blueberries are an antioxidant-rich superfood in and of itself, so blitzing some up as you would an acai smoothie bowl is a great way of using up a glut. If you’ve got some overripe bananas, peel, slice into chunks and freeze on a tray to use up for future smoothie bowls. Freeze blueberries while they’re plentiful and use them frozen too – in which case, you won’t need as much ice either! Other fun things can adorn the top of the smoothie bowl too, like fresh banana slices, granola, goji berries, cacao nibs, peanut butter, extra chia seeds and yoghurt. Use what you’ve got, and if you like it, then you can always add to your toppings arsenal as you go.

Ingredients 

  • 1 heaped cup (170g) blueberries plus extra for serving (fresh or frozen)
  • 2 frozen cut up bananas
  • 1 cup ice approx 6 cubes, or half a tray
  • ¼ cup coconut or natural yoghurt
  • 1 tbsp chia seeds
  • 1 tsp maple syrup
  • 2 tbsp toasted coconut flakes
  • 2 tbsp roasted macadamias chopped
  • Blueberries and/or other berries to top optional but excellent

Instructions 

  • In a blender, add the blueberries, frozen banana, ice, yoghurt of choice, chia seeds and maple syrup. Blitz until super smooth.
  • Pour into 2 smaller bowls (or 1 larger one if feeling extra hangry) and sprinkle in a crescent shape the coconut flakes, macadamias and blue(berries).
  • Serve at once – so good on a hot day.
