Parsley & Garlic (PG) paste pangrattato

‘Grated bread’ becomes great bread crumbs, and in this exemplary example, they’re pumped up with PG paste for extra flavour. Panko bread crumbs have a broader, flatter, crunchier surface area that really lends itself to being slathered in bonus flavour and fried with a little butter for extra crunch, but if you’ve already got some stale bread to use up, or bread crumbs in the freezer or pantry ready to have their thrifty thinking moment, use them instead.

Ingredients 

  • 2 cups Panko (Japanese) breadcrumbs
  • ½ cup PG paste
  • 50 g butter

Instructions 

  • In a heavy based fry pan add the breadcrumbs, PG paste and butter and cook over low heat stirring frequently until starting to go golden, this takes around 15 minutes. Cook for less if you want a softer topping. When cool, place in a container and store in the fridge for up to 3 days.
