Jarred white asparagus dip

One of my favourite quick and easy entertainer’s hacks is a jarred artichoke (or asparagus!) dip, utilising the flavour and fibrousness of someone else’s handiwork, with a few creamy, zippy additions, to feel like you’ve gone to a lot of effort. You’ll find jarred white asparagus at continental delis, but you could easy use tinned green asparagus, well drained, for a budget option. You can use Philadelphia cream cheese, or splash out on Neufchatel if you’re feeling fancy. Serve with crusty bread, crackers, or even some blanched asparagus spears (instructions here)!

Ingredients 

  • 250 g cream cheese softened
  • 1 jar (330g) white asparagus drained
  • 1 small garlic clove peeled
  • 1 lemon zested and juiced
  • 1 tsp of salt flakes
  • ¼ tsp freshly ground white pepper
  • Chives finely chopped

Instructions 

  • Pop all the ingredients except the chives in a food processor. Blend together until it forms a smooth texture, check for seasoning and adjust. Serve straight away with finely chopped chives, a drizzle of olive oil and a pinch more salt flakes and cracked pepper.
  • Make ahead and store in an airtight container in the fridge. It will last a week or so.
