Yakitori chicken and pineapple skewers with chilli salt

Servings: 4
Colin Lane is an icon of Aussie comedy, as both a solo performer and one half of Lano & Woodley. I don’t think anything could’ve prepared me for the whirling dervish that comes with having a bite to eat with Colin, though – in the best possible way! There’s something about the glint in his eye that says: “shall we play?” and PLAY we did! Before he arrived, I cooked my Darl’s Dhal for him, from In Praise of Veg, a hearty split lentil sweet potato curry that’s packed full of warming spice. Colin likes having friends around, but he’s not a confident cook, so I showed him a version of Laotian larb using tempeh – something he doesn’t have to ‘cook’ to cook! We capped off working on his disdain for pineapple in a savoury dish, with some chicken & pineapple yakitori skewers with spicy togarashi sprinkle. You’ll have to wait and see whether these hit the spot – but I can tell you, the kitchen was high drama!
