2 perfectly ripe, nutty avocados (Hass or Reed would be my pick here)
Zest and juice of 1 lemon
½ cup hemp seeds
1 teaspoon salt flakes
½ teaspoon freshly ground pepper
2 tablespoon extra virgin olive oil
Into a small food processor, add the avocado flesh, zest and juice of 1 lemon, hemp seeds, salt, pepper and olive oil and blitz until super smooth, taste for seasoning and serve into a shallow serving bowl with an extra sprinkle of hemp seeds over the top.
