One-pan cauli pilaf

Spending time with Dilruk, account-turned-comedian, is a laugh a minute – you really don’t know where his comedy is going to go, but you know it’ll be hard to keep a straight face! Dilruk’s recently gone on a health-kick and has been given strict instructions to eat more veg by his cardiologist, so I created a very veg-laden menu that’s still full of flavour. To kick off, I created a veg-loaded twist on his favourite – fried chicken, with an oldie but a goodie from In Praise of Veg: my Keralan Fried Cauliflower (aka: KFC!). Then we moved on to a fully loaded one pan cauliflower pilaf with the other half of the cauli, utilising Dilruk’s ingredient of choice: ghee. This is a bit biryani-ish, a bit plov-y, depending on your cultural reference, but Dilruk took great issue with my not washing the rice, which led to a very funny situation indeed. To cap things off, I tried to show Dilruk that he doesn’t have to fuss about with salads – he can just grab a bag of slaw from the shops and jack it up with plenty more flavour and some protein in the form of some skirt steak (far more bang for buck than something like fillet, too). Marinated in a Thai marinade to make a delicious Thai Coleslaw Herb & Beef Skirt Salad that is very worth giving a whirl! If you’d prefer to keep it fully vego, feel free to sub the skirt out for firm tofu instead.
