Limoncello spritz jug

If you’re looking for a twist on Aperol, then why not try this limoncello version – especially if you’ve forked out for a bottle of the good stuff for making limoncello tiramisu. The key with a spritz is to bring it all together just before serving, because the fizz in the jug starts to leave the party before your party gets fizzy. If you’re expecting more company than 12 glasses’ worth, you could premake the limoncello and lemon juice combo as a simple cordial, then crack open the Prosecco and soda water as needed

Ingredients
- 2 lemons washed
- 250 ml limoncello
- 1 750ml bottle Prosecco
- 250 ml soda water
- Ice
- Hard herb sprigs such as rosemary, thyme or tarragon
Instructions
- Using a speed peeler, zip off wide slices of lemon peel, then juice the lemons and set aside.
- Into a jug filled halfway with ice cubes, add the lemon juice, limoncello, Prosecco and soda water and give it all a gentle stir.
- Serve immediately in stemmed wine glasses filled with ice adding a sprig of herbiage and a twist or two of lemon peel.
