
Lamb shank and tarragon stew

Poh rarely gets time for a slow-braised meal, so I made her a version of a classic Georgian lamb stew called Chakapuli, using lamb shanks heady with tarragon. Poh brought along one of her breezy desserts – glutinous rice balls in pandan syrup (so fun and easy to make!) and I set myself the challenge to bake for a baker. Although I do enjoy devising cake recipes, I don’t particularly enjoy baking cakes. That’s why each one has to really be worth it, and this matcha lamington cake absolutely is. It’s zippy with fresh raspberries and raspberry jam, and vividly green with matcha powder. If you can’t find matcha, or would prefer to stick with chocolate, sub the matcha powder out for 2 tablespoons of cocoa.
