Charred marinated artichokes with lemon

Almost 25 years after she came to our screens as the titular character in the film ‘Looking for Alibrandi’, actor Pia Miranda still gets stopped regularly in the street. And I’m not surprised. This film was a pivotal reflection of multiculturalism in 90s Australia, and helped new migrants, myself included, feel more a part of the country’s fabric. For Pia’s menu, I wanted to lean into her Sicilian roots, making an anchovy and lemon butter, from scratch, that she could pair with crusty bread. Our entree of chargrilled artichokes with lemon & pistachio pangrattato was a hit, and could easily have used some of that anchovy butter through it for even more flavour (but I didn’t want to ruin the surprise!). We capped things off with a creamy mushroom wet-fry fettucini, which helped Pia push past her aversion to creamy pasta sauces. It felt quite apt indeed to make this dish for Pia, since the packet creamy pasta alfredo was my family’s first introduction to Italian food – and one of the first things I got to “cook” – stirring the boiled water through the packet noodle mix. Thankfully, I’ve come just a little way since then, but it just goes to show that we’re all on a spectrum of cooking, and that’s ok!
